stir fry pizza

Self raising flour (225gms), grated cheddar (50gms), fresh tomato pasta sauce (5tbsp), olive oil (2tbsp +1tsp), red onion, cut into wedges (1), thickly sliced courgette (1), yellow pepper, deseeded and cut into chunks (1).
First heat the oven to 220 degrees C. Take a large non stick baking tray; put wedges of red onion, slices of courgette and chunks of pepper in it. Sprinkle 1 teaspoon of oil over it and add seasoning and then mix it well. Place the tray in oven and roast them until they get soft and lightly brown. Take out the tray from oven and keep it aside. Now heat the grill to medium. Take a large bowl, add flour in it, add seasoning, add left over oil and then add 4 to 5 tablespoons of water in it. Mix all these to make soft dough. Knead the dough and then roll it on floured surface in circular shape. Take a large ovenproof non stick frying pan, place the rolled dough on it. Place the pan in oven and cook it for about 5 minutes until it gets brown and then turn the side and again cook it for about 5 minutes. Now apply the tomato sauce over the base and then spread the roasted vegetables over it. Then dust the cheddar cheese on top. Now place the pizza in oven and grill it for about 3 to 4 minutes until the cheese gets melted. Now cut the pizza into wedges and serve it with green salad.
